I posted here as the questions posed were in the DM Q and A.
I played on a world which allowed Red Knights. I am not sure how true to source or canon it was.
Most of the Red Knights were chosen from various legions. Most were just elite soldiers and fighters as I recall. I never saw monks.
As I understand the Red Knights, they are essentially high class of slaves. Their life is not their own and they serve their Master above all else. If they have no master then they defend the reds and enclaves with their life.

Having said that, it has been my impression that the Red Wizards of Thay don't like other Thayans to wear red as it is a symbol of their social status. In the 3.x Forgotten Realms art that I've seen, Thayan Knights are usually depicted as wearing black.

Black tends to be the uniform color for thayan knights. While color red is not directly illegal in Thay, it is illegal to impersonate a red wizard, which effectively extends to even wearing an outfit that could give impression that wearer is a red wizard, even if they do not actively claim so. Punishment for this is summary execution without trial and Thayan citizenry has effectively abandoned wearing the color all together, to avoid being accidentally found guilty.
As for knights, they're absolutely not a slave caste. Yes, each thayan knight has to swear absolute loyalty to the red wizards, and tattoos they're marked with makes them unable to resist any mind affecting magic from any red wizard. However, position of thayan knight is highly valued and prestigious. They're red wizards' most trusted bodyguards and lead Thayan military units. To even be considered as candidate to be a thayan knight, one must display absolute loyalty, significant martial ability and be free-born human citizen of Thay. Slaves or nonhumans (even half-bloods) are not permitted into the ranks until later editions. Among their members are also thayan nobility who did not have talent for magic, and thus couldn't become red wizards themselves.
I think the slave caste view comes from portrayals of the knights being abused or sacrificed by their red wizard masters, but this should not be taken as standard practice.

Correct on the above thanks. The question indeed was in reference to the domains available to clerics of red knight wherein folks and myself felt that poison or maybe the destruction domain felt like an odd domain option in frc.

Red Knights being used as a general expression could perhaps imply, Thayan Knights of Red Wizards, but here I am offering a perspective split: just in case. Knights out of Thay would be Thayan Knights as we know in the realms, Knights of thays Red Wizards. So yes, "Red Knights" is one expression, teehee. Thayan Knights may elect to worship the Red Knight somewhere along their career if they ever learn of the deity. They do serve lawful masters so it isn't out of the realm of reason to appreciate the literal Red Knight deity. Hope that helps.

I will add that while it is probably not unheard of a few Thayan Knights worshipping the Red Knight, the vast majority of them likely worship the deities that are more frequently known and worshipped in Thay.
Bane, Gargauth, Kelemvor, Kossuth, Loviatar, Malar, Shar, Talona and Umberlee.
