Dear omnipotent and most awesome DMs, what does the holy symbols do?
Well, my pets, when equipped, it gives you an effect much alike a magic circle vs alignment. This magic circle will largely reflect the deity's alignment (as closely as possible), with an emphasis in this order evil vs good, law vs chaos. So a Lathanderite would have the effect of a magic circle vs evil, where as a Helmite would get a magic circle vs chaos.
What about that awesome holy blast of light that I can induce 3 times a day?
This can be used as a RP device but it really does have some practical use. When used against undeads, it lowers their ability to resist the effects of turning.

Are there plans to add holy symbols for other deities/to other temples?
I didn't exactly look everywhere, but neither of the temples in Shallybrook (Yondolla and Mystra) sold holy symbols.

Yes, and No. You will likely only find holy symbols available to the common faiths worshipped in Cormyr (i.e., the nation, not the PC community). This does not completely rule out the possibility of the more obscure holy symbols of some religions but they will unlikely to be common. Upcoming updates will reveal more holy symbols.
