The Sensates are an organization in the City of Doors. They do have Sharessans in their organization but I've never heard of it being a rank within the Sharessan church. What is your reference material?

That site appears to be non-specific to Forgotten Realms, however since we don't offer the class sensate, saying the character was a Sensate of Sharess would equate to no more than a title. Since Sharess' church is not organized into a heirarchy, my interpretation would be that any cleric who wished could call himself/herself a sensate.
The Sensates are an organization in Planescape that seeks to indulge in absolute hedonism. They do have Sharessans in their ranks but they are not limited to Sharessans in Planescape.
In that context, a Sensate is not always a Sharessan, and a Sharessan is not always a Sensate. In Forgotten Realms the Sensate organization doesn't actually exist per se. (Unless a Sensate happens to drop by from another plane and found a local branch.)
I personally would discourage the use of the term Sensate as related to Sharess since it's an extra-planar organization, but like I said, in the context of FR, it's just a title and Sharessan clerics are basically at liberty to pick their own titles.
