Despite my efforts I've only found two references to specific gods from this pantheon (a NE god of ninjas, and a... sun-goddess I think?). So, is there any leeway for taking creative liberties here?

I consider the Eight Million Gods as the japanese shinto religion. Since the Kara-tur source book mentions only Chirasu, I copy paste the rest of the pantheon from japanese mythology. Amaterasu, Tsukyomi...
Try Googling the shinto religion and its Gods.
