Last question, I read that the reds don't necessarily pay too much lip service to the gods, but if one were to do so, is there a deity that should be a focus for rpsense? (ex. Azuth because of magic?)

I haven't read about Thay in ages but I think Kossuth was quite popular due to his aid during the Salamander War. If memory serves, it's the only faith that has a stand-alone temple at the Thayan Enclave in-game as well.

Kossuth is the most popular and politically connected faith in Thay, but other faiths that tend toward political connection would likely have more draw for Red Wizards than 'magic-based' faiths. For most Red Wizards, the pursuit of magic is a hereditary entitlement and secular pursuit, likely owing in some historical context to wrenching their freedom from the God-Kings through said art.
Red Wizard faiths would likely be far more pragmatic and tied to power and personal advancement. Gargauth, Waukeen, Siamorphe. Bane and Mask come to mind here. Shar would appeal to the more nihilistic novitiates, especially those rare few that came from the lower classes, especially those that were recruited involuntarily. Otherwise, a lot of the faiths would be familial-based, a Red Wizard from a House that traded in poisons might look to Talona, one from a shipping House might serve Umberlee, etc. The primordial-flavored destructive powers would have their fair share of adherents: Talos, Auril, Loviatar....
Some few really academically-inclined might favor Azuth or Oghma, but likely would keep their devotions private to keep from being jeered at.
And, of course, there would be the demon and devil 'pacts', Red Wizards that would appease these outsiders for promise of power but this would likely be viewed as more transactional and less worshipful.

The Unapproachable East book mentions Kossuth, Bane, Cyric, and Shar as having some prominence in Thay, with Kossuth the most widespread; Mask is also growing in influence there.
It also mentions that evil gods are openly worshipped. The worship of good gods is discouraged, but not forbidden.

I went ahead and chose Umberlee for the ship trading that was mentioned. Unsure if valid source but I read that the majority of thayan exports from the homeland to the enclaves were sent via the island tharc and it’s navy. Liking how the puzzles pieces are fitting together 🙂

I always saw my Wizards as polytheistic. So they would worship many gods, depending on the outlook.
So my Red Wizard was big on trade, massive on it. Even Slavery etc. So she worshipped Waukeen, Siamorphe and a few others. Like Bane, who was all about enslavement of the weak.
My Sage, Elvewyn... he is an Elven sage of Labelas. But he also pays homage to Oghma, Deneir, Mystra, Savras... Because they are all about knowledge, magic and information.
