About ten years ago, a friend of my family came back from Venice and brought a box of this with him: I now cannot get through Christmas without it...it is so good. I made a bread pudding out of one of these this year. Just added some figs (THE ULTIMATE BREAD PUDDING HUNKS-AND-CHUNKS AUGMENTATION) on top, because I hate the standard chunky crap inside, like raisins, cherries, whatnot. The candied orange peel made for a nice touch. Will likely use it again!

This beauty is what I made as my contribution to Christmas dinner: (not literally, this is a picture from the recipe site)Though my caramel wasn't quite as firm, I didn't let it set long enough, it was still super good. I made mini ones in a cupcake tray the other day too, but switched the caramel for a peanut butter fudge. I love baking numnums like this.

I actually meant to post the recipe, I blame my meds on somehow forgetting! www.kevinandamanda.com/recipes/dessert/dark-chocolate-salted-caramel-oreo-pie.htmlIt's actually super easy to make, it's no bake and has like 5 ingredients: oreo cookies, butter, brown sugar, chocolate chips, and heavy cream! (And flaked salt on top if you want it, which might sound weird to some, but it ads an amazing touch) I didn't have a tart pan, so I used a spring form pan which worked just fine, though the edges were straight and not as pretty as pictured above. Have as much as you want. Mmmgood!

Mmmgood! +2 Salt on sweets is the oldest combo on earth! Salted caramels? Chocolate covered bacon?!??!? The easiest way to totally screw up any sweet item (pumpkin pie, fudge, what have you) is to undersalt it! It's a total rookie mistake! Don't be that guy!

Only 2?

Post by darinder on Jan 9, 2015 14:59:14 GMT -5
Only 2? Well now... I could claim any of the following reasons: - I have enough self-control to enjoy only a reasonable amount of this deliciousness
- I had planned on sharing the deliciousness with a group of like-minded people
- I know how little self-control I actually have so planned on only making a small-sized version; thus greatly reducing the temptation I would doubtless feel
- I plan on running to and from the supermarket, so there'll be a net gain of 2kg because I'll have lost some weight with all that wonderful exercise
... Buuuuut... I don't think anybody here is foolish enough to believe I possess any of the virtues implied by the above choices (or any virtues whatsoever for that matter). The real truth? I left my credit card at my folks' place and I've only got enough cash on hand to buy a limited set of ingredients.

I've never tasted this...but I would like to try it just once to see if the taste truly is worth the cost. I'd have to steal it from someone's plate or sell my soul to make it though...this is the Frozen Haute Chocolate dessert and it's worth a cool 25,000 dollars. Yes, you read me right. In addition to the cocoas, frozen milk and whipped cream...it's made with five grams of 24-carat gold mixed in, and it's garnished with La Madeline au Truffe. It's also served up with a gold spoon and in a goblet surrounded by a gold and diamond crown. Or you could just make a great Tiramisu instead, which probably tastes better in my opinion anyway, especially if you switch the Marsala for Irish whiskey!

Over the last few years I have become a fan of Craisins, or dried sweetened cranberries. They are a remarkable substitute for raisins in almost every case. (Make that every, I know of no case where they are worse than raisins in a recipe.)
Craisin Muffins Craisin Sweet Rolls Craisin Oatmeal Craisin Oatmeal Cookies Craisin Bread Pudding Craisin Trail Mix
In fact, anything with raisins, just put Craisins in instead.

+1 on the raisin hate replacement train.
This reminds me of my own go-to to replace raisins... because I hate... hate.......... strongly dislike... raisins.
Figs. Those little dried up, gross looking brown hockey puck things in the cellophane sitting next to a box of mangoes at your local mega-mart. Top tier *chickenwing*, right there. Have a crappy bread pudding that calls for raisins? Some roasted hunk of beast or bird that wants raisins in the pan? Figs, Baby. Figs.
Just don't be that guy who leaves the damn stem on your figs, okay? Also don't be that guy who leaves half a fig in a muffin and lets your girlfriend's sister chomp into it.
Four words: Dental reconstruction payment plan.
Those things will eff you up if you don't cut them up small enough or remove the stems and bite into one unawares in something like a muffin.
Tastes great plus potentially dangerous? Wait... the perfect food?
EDIT: I wasn't gonna go here, but I actually prefer to get Unsweetened Dried Cranberries to Craisins, because... well, Craisin ia a Trademarked Brand by Ocean Spray... and they sometimes do stuff like add sugar to a perfectly good product... Heh... They also charge more for the fancy Ocean Spray bag and commercials with those morons in a berry bog.
Using "sweetened" fruit can throw off a recipe the same way using salted butter can throw off a recipe that calls for unsalted butter.
Just a word of warning! Baking is science!

You know what's amazing? Chocolate! And what goes super well with it? Peanut butter! Do you adore reeces? Think those little packs are too small? Well. This is going to save your life. Super easy to make. Unless you live in a place like Sweden. Peanut butter in sweden is a bit ... different! But thankfully the international isles stock the right stuff. I have better results with crunchy peanutbutter myself. Five ingredients, no bake, and takes no time to make. For the full step by step with picture instructions go here: sallysbakingaddiction.com/2013/07/02/no-bake-reeses-peanut-butter-bars/(Thankyousallyiloveyou) Now, I actually tend to just line a cassorole dish with tinfoil to make mine. So don't worry too much if you don't have a banking pan. If it's on the large side you'll just have thinner bars, which aren't so bad. Don't overdo it though. I recommend eating them when they're a bit warmed up from the fridge, but be careful, when they're at room temperature they melt fast in your fingers and can get pretty sticky. The biggest challenge is not eating it all at once. It's rich, but, if you have a little nibble, you'll want another one.. and another one.. Robin and I can go through a batch frighteningly quickly when we both take turns grabbing us each a nibble when we visit the kitchen after a batch has been made!
